Dried yeasts are freeze dried to ensure maximum freshness. Unless otherwise indicated, each sachet of yeast contains enough yeast cells to pitch into five gallons of wort. Make sure to rehydrate your dried yeast with water that is 100-110F before pitching. Let the yeast and warm water sit for at least five minutes before pitching.
