Calcium Carbonate (CaCO3) aka chalk is used to raise pH of the mash.

16 gm/hl (0.66 oz/bbl) will increase calcium content of mash by 50 mg/liter.

Use 1/2 teaspoon per gallon to lower acidity 0.1%. Use before fermentation.
